  • Cara's Triple Potato Soup

    This recipe makes a big batch, but you can half it if the volume is too much. We like to have leftovers!

  • Easy Tomato and Mozzarella Salad

    You won't find an easier recipe than this one. I make this when my girlfriends and I get together for a playday. You can prepare this recipe ahead of time to save time, it also makes the salad taste extra yummy! If you are rushed for time, use grape tomatoes cut in half and baby boccaccini and toss with the other ingredients in a bowl. No arranging needed.

  • Tomato and Peach Gazpacho

    Our family loves this recipe because it combines so many great tastes. We add peaches to the soup to add a bit of sweetness to satisfy the younger children at the table. This is a great recipe when you have so many tomatoes you don't know what to do with them but you can also make it in the winter for a change from hot soup. Brings you back to summer if you use tomatoes you put in jars or froze ahead.

  • Quick Minestrone Soup

    This is *so* good, and very easy! I don't use the cheese, but I put it on the table for those who wish to have some.

  • Apple-Walnut Salad with Cranberry Vinaigrette

    This salad is very easy and a great dish to serve if you have a vegetarian joining you for dinner.

  • Low Fat Potato Salad

    I am not a fan of eating all those exotic type salads but want to eat low fat. I found this recipe and am hooked. Hope you enjoy it too.
