Vegetable Dishes

  • Easy Tomato and Mozzarella Salad

You won't find an easier recipe than this one. I make this when my girlfriends and I get together for a playday. You can prepare this recipe ahead of time to save time, it also makes the salad taste extra yummy! If you are rushed for time, use grape tomatoes cut in half and baby boccaccini and toss with the other ingredients in a bowl. No arranging needed.

  • Fast Tomato Salsa

This recipe can be made anytime of the year but is best with fresh ripe tomatoes.

  • Easy Guacamole

This is a great recipe to make all year long and is a perfect recipe to get the kids interested in cooking. During tomato season we get the kids to pick the ingredients from the garden, combine with store bought items and they create their own masterpiece!

  • Veggie Spaghetti Sauce (or Chili)

Very good over whole wheat or vegetable pasta, or in lasagne. Cooked sauce can be baked in a casserole dish with cooked pasta. Freezes well. I usually bring some of this on our multi-family camping trip for a traditional shared spaghetti night.

  • Dressed Green Beans

This was so good, I actually had a dinner party just so I could introduce this recipe. Everyone loved them.

  • Spring Rolls

This is a great recipe for uncooked spring rolls. I found it on the net awhile back and have enjoyed them many times since. To put the recipe together you can find everything you need at a vientamese grocer or anywhere they have specialty foods. I hope you will enjoy them too!

  • Cooking Pumpkin

An easy way to use up those jack o lantrens. It can also be put in baggies and frozen for future use. I never waste anything!

  • Chili Beans, Border Style

You can be creative and change the beans around, I used kidney and white beans and it tasted great. This recipe can be a great vegetarian meal if you add a salad and some thick bread. I hope you like it as much as our family does.

  • Stewed Lentils

    Fast, nutritious and DELICIOUS!!

  • Lentils and Carrots

    "My baby's favourite"

  • Pasta, Beans & Sauce

"I can just hear my 10 month old say, Ma-Ma, Mia!! Amounts vary - especially if you freeze portions in cube trays."

  • Asparagus Tips

I was recently at a food show and found this great info on asparagus. With the season upon us I thought those who had not tried preparing it would find this info useful. Asparagus is great raw and cooked!

  • Broccoli and Cheese Bake

This could be eaten, hot, cold or warm. It's excellent for a picnic or BBQ.

  • Really Ripping Lentil Soup

    Packed with lots of nutrients.

  • Green Beans with Onions

If you are lucky (depending on the area of Canada you are living in) you will have a batch still in the garden. If not this is a great way to add some taste to some frozen or store bough fresh green beans.
