3 Layer Chocolate Cake

Ingredients

  • 3 cups flour
  • 1/2 cup cocoa powder, sifted
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 3/4 cups sugar
  • 1/2 tsp vanilla
  • 2 eggs
  • 1/4 cup oil
  • 1/2 cup mayonaise
  • 1 3/4 - 2 cups lukewarm water

Chocolate Cream Cheese Icing

  • 1/2 cup butter
  • 3 oz unsweetened chocolate, melted
  • 2 cups icing sugar
  • 2 tsp vanilla
  • 3 tbsp milk
  • 3 oz softened cream cheese

Directions

Beat eggs, sugar, oil, mayonaise and vanilla. Sift dry ingredients except flour, add to liquid ingredients. Mix well. Add flour and water alternately, ending with water. Divide batter evenly between 3 greased and floured 8" round cake pans, bake at 350 for 30 - 35 minutes. Frost with Chocolate Cream Cheese Icing (see below)

For the icing, just blend all ingredients together well. Spread on cooled cake.
