Apple Caramel Crockpot Dessert

Pure yumminess that can be served over angel food cake with ice cream.

Ingredients


  • 5 apples
  • 1 C. apple juice
  • 14 oz. caramel candies
  • 2 t. vanilla
  • 1 t. cinnamon
  • 2/3 C. peanut butter

Directions

  1. Peel, core and cut each apple into 16 wedges. Set aside.
  2. Combine apple juice, caramels, vanilla and cinnamon in the crockpot. Add the apples. Add the peanut butter by teaspoons to the apples. Stir.
  3. Cook and cover for 5 hours on Low. Stir to mix thoroughly and cook 1 more hour.
  4. Serve over angel food cake with vanilla ice cream.

    This was a huge hit with the kids! The caramel and apples blended together nicely. The next time I make this I'm going to use caramel spread instead of the candies, and make it in my smaller slow cooker. I did find that it was ready well before the 5 hours. Cooking times will vary greatly from slow cooker to slow cooker We served it over vanilla frozen yogurt, but it would be really nice over cake as well.

    Eating this and similar foods is a sure way to promote diabetes. The glycemic index is around 100! Stewing apples with a little water, vanilla, and cinnamon plus or minus peanut butter in the slow cooker will make just as nice a dessert or topping. Skip the sugary apple juice and caramels.

    Just a note to DoctorGlutenFree - get a grip! Everything in moderation - having a treat like this once in a while isn't going to promote diabetes. Do you think parents are going to serve this as a main course everyday? I think it sounds fabulous as a replacement to Christmas Eve Plum Pudding with Brown Sugar Sauce that we have every year...

    I agree with Janice's comment to DoctorGlutenFree--this is treat food, not everyday food! Let's enjoy a treat once in a while without the diet police riding us. For those who have problems with peanuts, I wonder if it would be okay to use the nut-free "peanut" butters (there's one made with chick peas I think), or tahini, or another nut butter, or even butter. Or maybe it could just be omitted. I haven't tried it yet, so I'm just guessing.

    I tried this slow cooker treat - and I also have a little person who has peanut butter allergy - I actually used Nutella - hazelnut as a substitute - worked really well.!!! Hope that helps others.

    A substitute for peanut butter is peabutter made with soy instead of peanuts. My family use it instead, as they can't take peanut butter to school.
