Asparagus and Ham Pie

This is a great spring recipe. It is easy and delicious and a great way to try out asparagus on the kids!

Ingredients

  • 3 tbsp. margarine
  • 1 tbsp. cornstarch
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 cup milk
  • 1/4 cup mayonnaise
  • 2 cups diced cooked ham
  • 1 1/2 lbs. asparagus (cooked)
  • 1 tbsp. lemon juice
  • 1 baked 9 inch pie shell
  • 1/4 cup grated parmesan cheese

Directions

Melt margarine in pan over medium heat. Stir in cornstarch, salt and pepper. Gradually add the milk and stir until smooth and thick. Let boil 1 minute. Stir a small amount of the hot mixture into the mayo then stir the mayo back into the hot mixture. Add ham, asparagus, and lemon juice. Cook until heated. Pour into the pie shell. Sprinkly with cheese. Brown 2 or 3 munites until lightly browned. Serves 6 people.
