Asparagus and Ham Pie

This recipe is quick and easy and tastes great with fresh spring asparagus. 

Ingredients

  • 3 tbsp. margarine
  • 1 tbsp. cornstarch
  • 1/2 tsp. salt
  • 1/8 tsp. pepper 
  • 1 cup milk
  • 1/4 cup mayonnaise
  • 2 cups diced cooked ham
  • 1 1/2 lbs. asparagus (cooked)
  • 1 tbsp. lemon juice
  • 1 baked 9 inch pie shell
  • 1/4 cup grated parmesan cheese

Directions

Melt margarine in pan over medium heat. Stir in cornstarch, salt and pepper. Gradually add the milk and stir until smooth and thick. Let boil 1 minute.

Stir a small amount of the hot mixture into the mayo then stir the mayo back into the hot mixture.

Add ham, asparagus, and lemon juice. Cook until heated.

Pour into the pie shell. Sprinkle with cheese and brown for 2 or 3 minutes.

Serves 6 people.
