Barbara's Salsa Salmon

Creates a new exciting taste.

Ingredients

  • 2 or 3 large salmon fillets
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 1/3 cup fresh chopped parsley
  • 1 small red onion finely diced
  • 2 or 3 firm tomatos (diced)
  • 1 lemon

Directions

Preheat oven to 350 degrees. Line a baking dish with aluminum foil and brush lightly with 1/2 tbsp olive oil. Place salmon fillets in dish and bake until cooked through @ 15 or 20 minutes. In a skillet, heat 1/2 tbsp olive oil. Add onions and garlic...saute until onions transparent. Add parsley and tomatos...cook on low heat until tender (do not overcook). Add the juice of 1 feshly sqeezed lemon. Season with salt and pepper. Simmer this topping mixture for about 5 minutes.

Arrange cooked fillets on plates and top with topping mixture... this is a great dish to serve with potato or rice.
