Beef Roll Ups

These are a wonderful change to the everyday beef dish.

Ingredients

  • 1 lb. round steak (ask butcher to cut paper thin)
  • mustard
  • cut strips green pepper
  • cut strips dill pickle
  • onions (sliced in rings and then halved)
  • diced turkey or ham bacon (low fat)
  • salt & pepper
  • beef bouillon

Directions

On each piece of thinly sliced beef: spread mustard, place 2 strips of green pepper, dill pickle, and onion. Then sprinkle few pieces of bacon and add salt and pepper if desired. Then roll up and secure with tooth picks. Brown lightly in skillet. Place in casserole dish adding bouillon and water. Cook in oven on low heat for 45 min. You may add corn starch to thicken sauce after the beef is cooked and removed.
