Best Banana Chip Muffins

Not only are these muffins delicious, but the bran makes them nutritious as well!  The chocolate chips are optional, my kids will eat them without them. I add them for me!

Ingredients

1/2 cup Sugar

6 Tbsp. Vegetable Oil

3 Ripe Bananas

1 Egg, lightly beaten

1 1/2 tsp Vanilla

1 cup All Bran

1 cup Flour

1 tsp Baking Powder

1 tsp Baking Soda

1 tsp Salt

1/2 cup Chocolate Chips (optional)

Directions

  1. Combine sugar, oil, bananas, egg, vanilla and all bran. Let stand 5 minutes.
  2. Stir dry ingredients into the Bran mixture.
  3. Fold in Chocolate Chips.
  4. Fill muffin tins 3/4 full
  5. Bake at 350 degrees F for approx.20-25 or until golden brown.
