Blender Mayonnaise

This is a must have recipe especially in the summer salad season!

Ingredients

  • 1egg or 2 egg yolks
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1 tbsp vinegar or lemon juice
  • 1 c vegetable oil

Directions

In blender, combine egg or egg yolks, Dijon mustard, salt, vinegar or lemon juice and 2 tbsp of the oil. Blend for 30 seconds. With blender still running, slowly drizzle remaining oil into mixture until all the oil is used and mixture is thick. Taste and adjust seasoning. Makes 1 cup.
