Blueberry or Chocolate Chip Muffins

Kids love making these, but we recommend parents supervise.

Ingredients

  • 4 cups flour (or 1/2 cup more, if needed)
  • 1/2 tsp salt
  • 1 3/4 cups sugar
  • 7 tsps baking powder
  • 3/4 cup margarine (at room temperature)
  • 4 beaten eggs
  • 2 tsps vanilla
  • 1 1/2 cup milk
  • 2 cups of frozen blueberries or chocolate chips

Directions

Combine dry ingredients with pastry blender, cut in margarine. In another bowl, beat eggs, vanilla and milk together until frothy. Pour into dry mixture and stir just until blended. Do not over mix. Gently fold in blueberries or chocolate chips. Spoon into paper baking cups in muffin pan almost to the top. Bake at 400F for 20 to 25 minutes. Makes 24 large muffins. *I bake my muffins at 350F for 20 to 25 minutes. Bon appetit!

    These were the best muffins ever! I find anything that is made with butter or margarine and not oil turns out well. I will make these lots.

    I've made these twice with chocolate chips, and added extra chocolate; they're very very good.I increased the temp to 375, as I found they turned out somewhat doughy. I still cooked them for 20-25 minutes though.Yummy; Original poster; could you please get rid of the post by Shelby; its very uncalled for.

    WOW, that sure is alot of baking powder my batter was very airy? Im putting them into the oven i hope thay turn out ok

    Just made them today for the first time. They turned out great and taste great too! My oven bakes fast so I baked them at 375 for only about 17 minutes.
