Boxing Day Brunch

We celebrate Christmas with my husband's family every year on Boxing Day. We try to make the breakfast a bit on the "english" side as his family is from the UK. To save time I make the eggs in a muffin tin and use stewed tomatoes, but you can make traditional fried eggs and baked tomotoes.

Ingredients

  • Eggs (number depends on how many you are serving)
  • Bread (one piece per egg - use thin bread if you can)
  • Butter or oil spray
  • Salt & Pepper
  • Baked Beans
  • Stewed tomatoes
  • Breakfast Sausage (2 links per person)
  • Bacon (Canadian style or strip - 1 piece each)
  • Mushrooms (cooked and browned)
  • Crusty bread

Directions

Eggs

Lightly spray or butter a muffin pan (the number depends on how many eggs you want per person). put a piece of bread into each cup, removing the crust makes this easier.

Crack an egg into each cup, top with salt and pepper.

Bake in 350 degree oven for 10 -15 minutes until the whites are set. Serve immediately.

Sides

Warm in separate pots: baked beans and stewed tomatoes.

Cook sliced or button mushrooms

Cook sausage (we do ours early and keep warm in the oven).

Cook bacon (we do this in advance also)

Slice crusty bread.

Serve!
