Bread Machine Bagel

A friend of mine gave me this recipe. I haven't tried it but it looks like a great recipe for the breadmaker!

Ingredients

  • 1 cup water
  • 1 1/2 teaspoon sugar
  • 1 teaspoon salt
  • 3 cups flour
  • 3 teaspoons yeast
  • 1 egg (beaten)
  • 1/4 cup cornmeal

For Whole Wheat Bagels Ingredients

  • 1 cup water
  • 1 1/2 teaspoon sugar
  • 1 teaspoon salt
  • 1 cup white flour
  • 2 cups whole wheat
  • 3 teaspoons yeast
  • 1 egg (beaten)
  • 1/4 cup cornmeal.

Directions

In small bowl, beat egg whites until stiff, but not dry. Set aside. In mMeasure water, sugar, salt, flour and yeast into baking pan. Insert baking pan in machine, and select "dough" setting. When dough is finished, turn dough out onto a lightly-floured surface. Divide into 10 equal portions. Roll into smooth balls. Use thumbs to make a 1 1/2 inch hole in the center of each ball. Place onto greased baking sheet.

Grease top of each bagel with soft shotening. Cover with wax paper and dry towel. Place in a warm area free of drafts and allow to rise for 30 minutes.

Meanwhile, bring 3 quarts of water and 1 tablespoon sugar to a boil. Simmer 3 to 4 bagels at a time in water for 5 to 6 minutes per side. Turn once or twice. Remove with slotted spoon. Drain on paper towels. Place on greased baking sheet dusted with cornmeal. Brush lightly with egg.

Sprinkle with poppy or sesame seeds, diced onion, garlic chips or shredded cheddar cheese, if desire

Bake at 400F (200C) 25 to 30 minutes.
Yield: 10 bagels
