Buttermilk Bran Muffins |
Anyone I have given this recipe to has always loved it. My favourite part is that the batter can be stored in the fridge to make muffins on the fly! Makes 4-5 dozen.
Ingredients
- 4 cups bran flake cereal
- 2 cups All bran cereal
- 2 cups boiling water
- 1 cup margarine or butter, softened
- 1 1/2 cups white sugar
- 1 1/2 cups brown sugar, packed
- 4 eggs
- 4 cups (1 litre) buttermilk
- 1/4 cup molasses
- 5 cups flour
- 2 tablespoons baking soda
- 1 tablespoon baking powder
- 1 tsp salt
- 2 cups raisins (we like milk chocolate chips)
Directions
1. In large bowl combine cereals and boiling water. Let sit in another mixing bowl cream butter and sugars together. Add eggs one at a time mixing well after adding each. Mix in buttermilk. Add molasses. Stir in cereal mixture.
2. In another bowl combine flour, soda baking powder, salt and raisins. Mix thoroughly. Add to batter. Stir just to combine.
3. Store in refrigerator. It will keep for six weeks ( or as long as your buttermilk's expiry date- but won't last that long!) As required, fill greased muffin cups or add to muffin liners 3/4 full.
4. Bake in 400 degree oven for 20 to 25 minutes. Remove from pan after 5 minutes.

It says at the top under "By SarahNB" that it makes 4-5 dozen (that would be 48-60 muffins). OK if you've got room in your freezer!I wonder if the recipe can be halved?

this recipe can be halved but since buttermilk comes in 1 litre cartons I always just make a full batch. The batter can also be refrigerated up to the date your buttermilk expires. They are delicious, I doubt very much you'll have to worry about the milk expiring! These are definitely a favourite around here by all!

I think if you make the full batch they would freeze well. They don't last that long around here esp with chocolate chips in them. You can do half raisins and half chocolate chips.
