Buttermilk-Cucumber Dressing

Nice low cal dressing.

Ingredients

  • 1/2 cucumber
  • pinch of salt
  • pinch of sugar
  • 1 tsp white wine vinegar
  • 1/4 c buttermilk
  • 2 tbsp plain skim milk yogurt
  • 1 tbsp lemon juice
  • 1 tbsp finely chopped fresh dill or 1 tsp dried dill
  • 1 tbsp finely chopped fresh chives or 1 tsp dried chives
  • 1 tbsp finely chopped fresh parsley
  • 1 clove garlic, crushed
  • pepper to taste

Directions

Peel cucumber and halve lengthwise. Scrape out and discard seeds. Grate coarsely into small bowl. Stir in salt, sugar and vinegar, set aside for 10 minutes.

In medium bowl, stir together buttermilk, yogurt, lemon juice, dill, chives, parsely, garlic, and pepper to taste. Drain cucumber well and stir into buttermilk mixture. Chill. Makes about 3/4 cup.
