Campfire Beans

By Bonnie Miller

Our kids saw an old movie where the cowboys were eating beans from a can and decided it would be fun to have beans on our last camping trip.  We didn't cook the beans in the can but we enjoyed our own variation in a big cast iron pot.

Ingredients

1 tsp cooking oil or spray

1/2 cup chopped onion
4 cans of baked beans

Materials

  • Cast Iron Pot
  • Long handled Wooden Spoon
  • Cooking Gloves

Directions

  1. Heat a cast iron pot on top of hot coals.
  2. To the hot pot, add oil or spray pot.  Cook onions until soft and brown.  Do not let burn.  Add beans and salt and pepper to taste.  Simmer until heating through.
Serves 4 to 6 people.
