Campfire Skillet Dinner

I pre-cut my chicken and ingredients before we leave and keep everything stored in ziplock bags in the cooler.  We make this dinner our first night at camp because we can get unpacked and settled while it cooks.

Ingredients

  • 6 chicken breasts, cubed
  • 1 can campbells cheese and brocolli soup
  • 2 Sweet Potatoes, cut into bit size chunks
  • 2 White Potatoes, cut into bit size chunks
  • 1 Medium Onion, diced
  • 1 Bell Peppers, diced
  • Can of green beans
  • Vegetable oil
  • Salt & Pepper to taste 

Directions

  1. Heat a large cast iron skillet in hot coals. 
  2. Add oil, onions, peppers and cook until soft. 
  3. Add chicken and stir to brown.
  4. Add can of soup and 1/2 can water.  Mix.
  5. Place chunks of potato and green beans around chicken mixture and cover with foil.  Cook for 30-40 minutes until potatoes are cooked.  
  6. Add salt and pepper to taste.  Enjoy.

    i am adventuring out with my 5 grandchildren so i am looking for easy food to cook so this has been very HELPFUL thankyou all
