Candy Cupcake Sushi

Have fun making this Japanese inspired dish as a dessert!

Ingredients

  • 1 Duncan Hines vanilla or chocolate cake mix

Icing

  • 1 cup icing
  • ¾ tsp vanilla
  • 4 ½ cups coconut

Decorations

  •  8 coloured fruit roll up candies, assorted candies (jelly beans, nerds, gummy fish, dried fruit (blueberries, cranberries, papaya and mango)

 

Directions

Cupcakes

  1. Grease and flour mini cupcake tin
  2. Follow your cake mix recipe
  3. Fill cupcake tins three quarters full with batter
  4. Bake until toothpick inserted into the centre comes clean

Icing

  1. In a mixing bowl, combine Duncan Hines icing and coconut
  2. Set aside until you are ready to decorate.

Decorating

  1. Trim the fruit roll ups to a bit higher than the height of the cupcake
  2.    Wrap them around the side of one cupcake.
  3.    Add a spoonful of the coconut mixture an spread over the top of the cupcakes
  4.    Arrange the dried fruit and cut candy on top of the mixture.
  5.    Serve the dried mango on the side to resemble ginger.

Fun Tip: Use chocolate syrup in a bowl for look alike soy sauce.
