Candy Cupcake Sushi |
Have fun making this Japanese inspired dish as a dessert!
Ingredients
- 1 Duncan Hines vanilla or chocolate cake mix
Icing
- 1 cup icing
- ¾ tsp vanilla
- 4 ½ cups coconut
Decorations
- 8 coloured fruit roll up candies, assorted candies (jelly beans, nerds, gummy fish, dried fruit (blueberries, cranberries, papaya and mango)
Directions
Cupcakes
- Grease and flour mini cupcake tin
- Follow your cake mix recipe
- Fill cupcake tins three quarters full with batter
- Bake until toothpick inserted into the centre comes clean
Icing
- In a mixing bowl, combine Duncan Hines icing and coconut
- Set aside until you are ready to decorate.
Decorating
- Trim the fruit roll ups to a bit higher than the height of the cupcake
- Wrap them around the side of one cupcake.
- Add a spoonful of the coconut mixture an spread over the top of the cupcakes
- Arrange the dried fruit and cut candy on top of the mixture.
- Serve the dried mango on the side to resemble ginger.
Fun Tip: Use chocolate syrup in a bowl for look alike soy sauce.
