Celestial Chicken Salad

Turkey can be a delicious substitute for chicken and yogurt can be used as an alternative to using mayonnaise.

Ingredients

  • 1 1/2c celery chopped
  • 1/2 tsp salt or less
  • 1c light mayonnaise
  • 1/2c pineapple chunks, drained
  • 1c orange sections canned, mandarin
  • 1/2 lb grapes seedless
  • 1/2c walnuts chopped
  • 1c yogurt or sour cream
  • 2c cooked cubed chicken

Directions

Combine first five ingredients and chill overnight. Next day, combine remaining ingredients and add to first mixture. Chill four hours or longer before serving. Per serving: 208 Calories; 7g Fat (30% calories from fat); 24g Protein; 12g Carbohydrate; 76mg Cholesterol; 358mg Sodium.
