Cheddar Broccoli Chowder |
A cheesy meal idea your family will love.
Ingredients
- 2 tablespoon butter
- 1 small onion, finely chopped
- 1/4 cup all-purpose flour
- 3 cups chicken consummate soup
- 2 cups potatoes, peeled and cut into
- 1/2 inch cubes
- 1 bay leaf
- 3 cups finely chopped broccoli florets and peeled stalks (could also go 50/fifty using cauliflower or carrots)
- 1 one/2 cups milk (Homo-creamier)
- 1 one/2 cups shredded cheddar cheese
- pepper to taste
Directions
Melt butter in a large size pot over medium. heat. Cook onion, stirring for 2 minutes or until softened. Blend in flour and chicken consummate, bring to a boil, stirring until thickened.
Add potatoes and bay leaf; reduce heat, cover and simmer, stirring occasionally for 10 minutes.
Add broccoli; simmer, stirring occasionally, for 10 minutes more or until vegetables are tender.
Stir in milk and cheese; heat just until cheese melts and soup is piping hot. Do not let soup boil or it may curdle.
Remove bay leaf; adjust seasoning with pepper to taste. ENJOY!
