Chicken and Fresh Vegtables

Being on Weight Watchers, I try to find as many quick and easy recipes for poultry. Sometimes I also add some sm. red potatoes or serve with cooked rice.

Ingredients

  • 1 sm. head caulflower
  • 2 med. carrots - sliced thin
  • 2 Tbs fresh or dried parsley
  • 1/4 tsp. pepper
  • 1/2 cup boiling water
  • 4 Chicken breast halves - skinless
  • 2 tomatoes - ripe, sliced
  • 1 lg. onion sliced thin
  • 1 Tbs. basil - divided, chopped
  • 1 cup chicken broth
  • 2 Tbs. lemon juice

Directions

Break the cauliflower into small pieces. Combine vegtables in 3 quart baking dish. Sprinkle with 1 Tbs. parlsey, 2 tsp. basil, and the pepper. Pour the chicken broth over vegtables. Make paste of the remaining parsley and basil, garlic powder and lemon juice. Place chicken over vegtables. Spread the paste on chicken, cover and bake at 350F for 1 1/2 hours or until chicken and vegtables are tender. Makes 4 servings.
