This recipe is an alternative to jarred “meat and rice” meals. It is
easy to prepare your own, and leftovers can be frozen and kept for a
later date. Either brown or white rice can be used, depending on what
you have available.
Ingredients
- 1⁄2 cup ( 125 mL) diced cooked boneless skinless chicken
-
1⁄4 cup (50 mL) cooked brown rice
-
1 peach, peeled and diced
-
2 tbsp (25 mL) 2% milk
Directions
- In a food processor or using a handheld blender, purée chicken, rice, peach and milk to desired texture.
- Makes 3⁄4 cup (175 mL)
- 6 to 8 months
Kitchen Tip
A ripe peach can be peeled and used raw in this recipe. For under-ripe peaches, simmer in a small amount of boiling water until tender.
