Chicken Caesar Salad

All the good flavour of Caesar salad with the added flavour of garlic sauteed chicken.

Ingredients

For the Chicken

  • 2 whole boneless chicken breasts, skinned, halved
  • 2 tlbs butter or margarine
  • 1/2 tsp finely chopped fresh garlic
  • 1/4 tsp salt
  • 1/4 tsp coarsely ground pepper

For the Dressing

  • 2 tlbs freshly grated Parmesan cheese
  • 1/4 tsp coarsely ground pepper
  • 2 tlbs vegetable oil
  • 1 tlbs cider vinegar
  • 1 tlbs lemon juice
  • 2 tlbs dairy sour cream
  • 1 tlbs country-style Dijon mustard

For the Salad

  • 2 c torn Romaine lettuce
  • 1 medium ripe tomato, sliced
  • garnish with garlic melba rounds (optional)
  • ice cubes

Directions

Cut each halved chicken breast lengthwise into thirds. In 10-inch skillet melt butter until sizzling. Add chicken, garlic, salt and 1/4 tsp pepper. Cook over medium high heat, turning once, until chicken is browned and fork tender (7-10 minutes). Meanwhile, in small bowl stir together all dressing ingredients. In large bowl place lettuce. Pour dressing over lettuce, toss to coat. On platter or individual salad plates place lettuce . Place tomato slices and chicken on lettuce. Arrange garlic rounds on salad.
