Chicken Foil Pockets

We make this recipe everytime we go camping.  I almost always prepare the packages before we leave and pack them in a cooler.  We have a meal ready to cook when we arrive at our camp site and get our fire going.  It is easy to make on site as well.

Ingredients

Boneless chicken breast cubed, 4
Mushrooms, 1 pkg sliced
Peppers, 1 sliced into strips
Onion, 1 small diced
Garlic, 2 cloves
Potatoes, 2 cubed
2 Onions, diced
Olive oil
Salt & pepper

Directions

Combine ingredients in a large plastic ziplock bag.  Toss to coat.   Divide mixture into 4 foil pouches, wrap tightly with heavy duty foil or double regular foil.  

Cook over hot coals for 35 to 40 minutes.  Until potatoes are tender and chicken juices are clear.

    the recipe has onions in it twice...do you really add 3 onions to the mix or did we miss a veggie???
