Chicken Italian Vegetable Soup

Great recipe for toddlers and preschoolers.

Ingredients

  • 1/2 cup of thinly chopped carrots
  • 1/2 cup of thinly choppped celery
  • 1/2 cup of thinly sliced zucchini
  • 1/2 to 1 cup of potatoes cut into small cubes
  • 1/4 onion sliced into quarters
  • salt to taste
  • 1 cup of chicken breast sliced into small finger sizes
  • 1 cube of Italian vegetable bullion

Directions

In a medium size pot, add the water ( 1/2 pot full) adding the onions, carrots, celery and the chicken. Bring to boil, aprox 10 to 15 minutes depending on your type of stove you're using. Stir the vegetable, adding the rest of the vegetable and let them cook until tender for about 30 to 45 minutes.

Serve hot, or warm with italian bread sticks, or crackers. Add parmigiano or cheddar cheese if you wish.

Serves 2 to 4.
