Chicken Parmesan Heroes |
Boneless, skinless chicken poaches gently in the simmering sauce on low heat in your slow cooker, coming out fork-tender and as flavorful as can be. It’s perfect for stuffing into crisp rolls for an easy hot-sandwich supper. Be sure to provide lots of napkins. Makes 6 servings.
Ingredients
- 4 cups jarred tomato sauce or Sweet Tomato Sauce (page 51) or Tomato and Red Wine Sauce (page 52) from The Italian Slow Cooker.
- 6 boneless, skinless chicken breast halves
- salt and freshly ground pepper
- 1/4 cup freshly grated Parmigiano-Reggiano
- 8 ounces mozzarella cheese, cut into 6 slices
- 6 fresh basil leaves
- 6 hero rolls
Directions
1. Pour the tomato sauce into the slow cooker. Pat the chicken pieces dry with paper towels and sprinkle with salt and pepper to taste. Place the pieces, overlapping slightly, in the sauce. Cover and cook on low for 3 hours.
2. Sprinkle the chicken with the Parmigiano-Reggiano and top each piece with a slice of mozzarella and a basil leaf. Cover and cook for 15 minutes more, or until the cheese is melted.
3. Cut the rolls partially open and fill each one with a cheese-covered chicken breast and sauce. Cut the sandwiches in half. Serve hot.
