Chili Beans, Border Style

You can be creative and change the beans around, I used kidney and white beans and it tasted great. This recipe can be a great vegetarian meal if you add a salad and some thick bread. I hope you like it as much as our family does.

Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, mashed
  • 1/4 cup, chopped green bell pepper
  • 1 can black beans, drained and rinsed
  • 1 can small white beans, drained and rinsed
  • 2-4oz cans of copped green chilis or use fresh jalapeno
  • 1 can chopped or whole tomatoes with juice
  • 1 tsp cumin
  • 1/2 tsp chili powder (we like more)
  • Salt and Pepper to taste
  • Garnish - chopped green onions, sour cream (lowfat or nonfat)
  • some grated cheddar cheese

Directions

Sweat onions, garlic and bell peppers in a large pot. Add remaining ingredients except garnish and simmer for at least 30 minutes. Garnish and serve with salad and bread, tortillas or nacho chips.
