Chocolate Chip Pancakes

There isn't a kid around who would say no to this recipe.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 2 tbps sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 1/4 cup whole milk
  • 1 tbsp vegetable oil
  • 1/2 cup semi-sweet chocolate chips

Directions

Combine flour, sugar, baking powder, soda and salt in a bowl and stir to combine evenly. In another bowl, beat in milk and 1 tbsp vegetable oil. Stir milk mixture into dry ingredients with a few brief strokes. Add chocolate chips and stir a few more times. Batter will be lumpy.

Lightly coat the bottom of a wide skillet or griddle with vegetable oil. Use a ladle or measuring cup to make 3-inch pancakes. Cook until small bubbles appear on the surface. Gently flip and cook until the pancak is just cooked through. Do not overcook. Repeat with remaining batter.

Keep warm in a 200 degree oven. Serves 2 to 4.
