Chocolate Mint Cookie Mounds |
A double shot of chocolate and mint — mint chocolate chips, cocoa and peppermint extract — makes this dessert twice as decadent.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 egg
- 2 tsp peppermint extract
- 1 2/3 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1 tsp salt
- 1 300g bag mint chocolate chips (approx. 1 1/2 cups)
Directions
1. While the oven preheated to 375 degrees (F), I creamed the butter and the brown sugar in my stand mixer (you could do all this by hand too). Next, I added the egg and peppermint extract and mixed thoroughly.
2. In a medium mixing bowl, I combined the flour, cocoa powder, baking soda, salt. The dry ingredients were added to the other mixture gradually and mixed thoroughly. Then I mixed in the chocolate chips to finish the dough.
3. The dough was dropped by heaping tablespoons onto a parchment lined cookie sheet, about 2 inches apart. They baked for 10 minutes, cooled on the pan for a few minutes then transferred to a wire rack to cool completely.
