Hard-boil some eggs while you're preparing dinner and turn them into a quick and tasty lunch the next morning.
Ingredients
- Eggs
- Mayonnaise or Miracle Whip
- Salt & Pepper
- Fresh Dill (optional)
Directions
- Place eggs in pan of cold water. Bring to a boil and cook for 5 minutes. Remove from heat and let stand 15 minutes. Run under cold water until cool to touch.
- Chop cold eggs in medium sized bowl. Add mayonnaise, salt & pepper and dill — stir to combine.
- Top bread or bagel with lettuce, tomato and egg mixture. Cut and store in lunch container.
