Chopped Egg Salad

Chopped Egg Salad Hard-boil some eggs while you're preparing dinner and turn them into a quick and tasty lunch the next morning. 

Ingredients

  • Eggs
  • Mayonnaise or Miracle Whip
  • Salt & Pepper
  • Fresh Dill (optional)

Directions

  1. Place eggs in pan of cold water.  Bring to a boil and cook for 5 minutes.  Remove from heat and let stand 15 minutes.  Run under cold water until cool to touch.
  2. Chop cold eggs in medium sized bowl.  Add mayonnaise, salt & pepper and dill — stir to combine.
  3. Top bread or bagel with lettuce, tomato and egg mixture.  Cut and store in lunch container.
