Christmas Eve Seafood Chowder

Seafood was always a Christmas Eve Tradition in my parent's home growing up. Now that I have my own family my husband and I have adopted this as one of our family's traditions. Leftovers are great for lunch on a busy Christmas Day! The great news...this recipe is delicious anytime of the year! Enjoy!

Ingredients

  • 3 cups Water
  • 3 cups Chicken Broth
  • 4 Large Potato, diced
  • 1 Large Onion, diced
  • 1tsp. Salt
  • 1lb Raw Fish (Haddock, sole, pollack, salmon, or chowder mix pack)
  • 1 300g can Broken Lobster
  • 1 - 280 ml can Clams
  • 1/2 lb Scallops (fresh is best, but frozen will work too)
  • 2 cups Cereal Cream
  • 1 cup Whole Milk
  • 4 Tbsp Butter (or Margarine)
  • 1/2 tsp Pepper 1/2 tsp.
  • 2 Tbsp Parsley, fresh chopped (1 T Dried)

Directions

Dice potato. Simmer in water in large saucepan until tender. Add diced onion, fish and salt.

Simmer until fish is tender. Add canned seafood and scallops. Simmer for 5 minutes. Add cream, milk and margarine. Heat until very hot but not boiling. Simmer on low heat for 20 to 30 minutes to allow flavors to blend. Adjust seasoning. Add parsley.

    Oh my god! A Gluten-free (with the right chicken broth) seafood chowder. I must try this one.
