Christmas Morning Wife Saver

Reserve Christmas day for relaxation by making this traditional brunch the night before — just pop it in the oven for an hour in the morning and you’re good to go!

Serves 8. 

Ingredients

  • 16 Slices white bread, crusts removed
  • 16 Slices of Canadian back bacon or ham
  • Slices of sharp (old) cheddar cheese
  • 6 Eggs
  • ½ tsp pepper
  • ½ to 1 tsp dry mustard
  • ¼ cup minced onion
  • ¼ cup finely chopped green pepper
  • 1 to 2 tsp Worcestershire sauce
  • 3 cups milk
  • Dash Tabasco
  • ½ cup butter
  • Special “K” or crushed Cornflakes

Directions

Put 8 pieces of bread in a 13- x 9-inch (3L) buttered glass baking dish. Add pieces to cover dish entirely. Cover bread with thinly sliced bacon. Top with slices of cheddar cheese. Cover with slices of bread.

In a bowl, beat eggs and pepper. Add mustard, onion, green pepper, Worcestershire, milk and Tabasco. Pour over bread, cover and refrigerate overnight.

In the morning, melt butter and pour over top. Cover with crushed Special “K” or Cornflakes

Bake at 350°F (180°C) uncovered, 1 hour. Let sit 10 minutes before serving. Serve with fresh fruit.

    I always ask my mother to make this throughout the year, but she still only makes it on Christmas, and it is one of my favorite traditions. SO DARN TASTY.

    After moving away from the town I grew up in, my family made it a yearly tradition to visit my Mom's best friend's house because she has a water-front house and plenty of room for guests. She always has a big pan of this made and in the morning, I just microwave a plate of it. Even microwaved, it's amazingly delicious. I'm sad that I only get it once a year. I'll have to compare her recipe to this one.
