Classic Potato Salad

This is the most popular summer salad recipe.

Ingredients

  • 4 c diced cooked popatoes
  • 1 c sliced celery
  • 1/2 c sliced green onions
  • 1/2 c diced green pepper
  • 3 hard-cooked eggs, chopped
  • 1/2 c sour cream
  • 1/2 c mayonnaise
  • 1 tsp dry maustard
  • 1tsp salt

Garnish:

  • lettuce leaves
  • Crumbled cooked Bacon
  • radish slices
  • fresh dill sprigs

Directions

In large bowl, combine potatoes, celery, onions, green pepper and eggs. Blend together sour cream, mayonnaise, mustard and salt. Pour over potato mixture and toss gently. Chill for several hours to blend flavors. Taste and adjust seasoning. Serve in lettuce-lined bowl. Top with bacon, radishes and dill.
