Country Captain Chicken |
This recipe only makes 2 servings so double or triple it so you have leftovers. I serve it with bread and rice or noodles.
Ingredients
- 2 tb olive oil
- 1/2 c green pepper; chopped
- 1/4 c chopped onion
- 1 clove garlic; minced
- 4 skinless boneless chicken thighs or breast
- 1 tb flour
- 1/4 c chicken broth
- 1/2 ts salt
- 1/8 ts pepper
- 1/4 ts paprika
- 1 ts curry powder
- 2 c canned tomatoes; chopped
- 1/4 c golden raisins
- 2 tb slivered almonds; optional
Directions
Heat the olive oil in a 10-inch non-stick skillet. Add the green pepper, onion and garlic and saute over medium heat for 5 minutes Dust the chicken thighs with flour. Add to the skillet and brown 3-5 minutes per side. Pour in the chicken broth and, using a wooden spoon, scrape up any browned bits.
Stir in salt, pepper, paprika and curry powder and cook one minute. Stir in tomatoes and raisins; simmer, covered, 15 minutes. Sprinkle with almonds.
