Crisp Cucumber n' Melon Chicken Salad |
Fresh herbs flavour this creamy, fruited chicken salad!
Ingredients
- 1/2 c whipping cream
- 1/2 c mayonnaise
- 2 tlbs chopped fresh dill or 2 tsp of dried dill weed
- 1 tsp chopped fresh tarragon leaves or 1/4 tsp dried tarragon
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 tsp grated lime peel
- 4 c cubes 1/2-inch cooked chicken
- 2 c cubed 1/2-inch honeydew or cantaloupe
- 1/2 c toasted slivered almonds (optional)
- 1 medium cucumber, peeled, sliced, cut in half
Directions
In chilled small mixer bowl beat chilled whipping cream at high speed, scraping bowl often until stiff peaks form(1-2 minute). Gradually fold in mayonnaise; stir in all remaining dressing ingredients. In large bowl combine all salad ingredients. Add dressing; toss to coat. Refrigerate 2 hours before serving.
