Crisp Cucumber n' Melon Chicken Salad

Fresh herbs flavour this creamy, fruited chicken salad!

Ingredients

  • 1/2 c whipping cream
  • 1/2 c mayonnaise
  • 2 tlbs chopped fresh dill or 2 tsp of dried dill weed
  • 1 tsp chopped fresh tarragon leaves or 1/4 tsp dried tarragon
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 tsp grated lime peel
  • 4 c cubes 1/2-inch cooked chicken
  • 2 c cubed 1/2-inch honeydew or cantaloupe
  • 1/2 c toasted slivered almonds (optional)
  • 1 medium cucumber, peeled, sliced, cut in half

Directions

In chilled small mixer bowl beat chilled whipping cream at high speed, scraping bowl often until stiff peaks form(1-2 minute). Gradually fold in mayonnaise; stir in all remaining dressing ingredients. In large bowl combine all salad ingredients. Add dressing; toss to coat. Refrigerate 2 hours before serving.
