Crock Cream of Broccoli Soup

I always love to order cream of broccoli soup when dining out! Now I skip that and make it at home, it's even better homemade!

Ingredients

  • 2 cups chicken broth (low sodium is best)
  • 2-3 cups fresh or frozen broccoli
  • 1 stalk celery, chopped
  • 1 medium carrot, chopped
  • 1 medium onion, chopped
  • 1/2 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup milk
  • 1 1/2 cups Cheddar cheese, grated

Materials

Food processor, blender or immersion blender

Directions

  1. Place all ingredients, except milk and cheese, in slow cooker. Cover and cook on Low until vegetables are very tender, about 4 to 6 hours.
  2. Pour mixture into blender or food processor; cover and process until smooth. OR, if you you like a little more texture, use an immersion blender or potato masher right in the slow cooker and skip the blender of food processor.
  3. Place broccoli mixture in a large saucepan; stir in milk and cheese. Heat over medium heat, stirring constantly, until cheese is melted be careful NOT to boil the soup!

    I liked that this recipe had other vegetables in it. My kids will not eat carrots, so this is a way to get them to eat them. When I made this for our family of 6 I doubled it so we could have leftover for lunch the next day. I prefer to use the immersion blender for my portion of the soup, as I like it a little chunky. The kids like it smoother so I used the full size blender for their portions. Another thing I do with this soup is saute the onions, carrots & celery first in my 6qt Versaware Pro Crock Pot. The insert can be used on the stove top then placed into the Crock Pot. Sauteing the vegetables first gives this soup a really nice rich flavour.

    I make mine pretty much the same except I first fry off 3-4 chopped bacon slices of bacon til crisp. Then I take it out and use a couple of table spoons of the drippings to brown the onions then add the broccoli. 3Tbsp.flour. 2 envelopes Knorr Broccoli soup mix and the chicken stock and cook 3-4 hours in the slow cooker. Then use the blender or the emerion blender, then add the milk and cheese. Enjoy.

    This is an excellent and delicious soup! Very easy to follow and make! I added about 4 garlic cloves (sliced) into the slow cooker, which made the soup much more tastier and also a light garlic taste! I skipped the blended step and just mashed the broccoli with a mash potato masher !!!!!

    Well I made it and my kids did not like it but not sure why... It was not the traditional Cream of Broccoli soup that I'd made before for my husband so he was a no go. On the bright side I likes it but it may have needed a little more of something....
