By Cristie
This recipe is great with the ham cooked in the recipe or served on the side.
Ingredients
- 6 medium potatoes, sliced thinly
- 2 sweet white onions, sliced thinly
- 2 cups cooked ham, cubed
- 1 tablespoons butter or margarine
- 2 tablespoons all-purpose flour
- 1 tsp dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 can condensed cream of celery soup
- 1 1/3 cups water
- Non stick spray
Directions
- Spray inside slow cooker to coat.
- In a slow cooker, layer potatoes, onions and ham.
- In a microwave safe bowl combine remaining ingredients and cook for 3 minutes. Pour over potato mixture.
- Cover and cook on low for 8-9 hours or until potatoes are tender.

This was really good, but I think next time I will substitute the cream of celery soup for cream of chicken, we like it better. I cooked this on low in my 6qt Oval Versaware Pro Crock Pot and I found it was ready well before the 8 hours.

I really liked this recipe as I find oven scalloped potatoes tend to be a bit dry. In our trial we cut the ham into chunks but I found they reduced quite a bit in size during cooking and the dish seemed more like a side. The second time we tested it out we cut the ham into larger pieces and found it cooked nicely. I think I would even try leaving the ham out and just making the remaining recipe, serving the ham on the side. We used the 6tq Oval Versaware Pro CrockPot for this dish and the potatoes stayed nicely when it switched the warm setting.

This is a definite favorite in our house. I usually double the flour, butter and dijon for a bit more flavor and I also cut up the potatoes instead of slicing them. I also add chopped celery for a little color.

There will be 10 of us for Thanksgiving dinner. The recipe doesn't indicate how many it feeds. Will this be good for 10 taking into consideration there will be appetizers, soup, veggies, stuffing, turkey of course and dessert?Thank you.

I doubled this recipe for 12 people for Thanksgiving dinner 09. I used 2 cups of water and substituted the cream of celery soup with Cream of Mushroom. 7 hours would have been enough time on low. I cut cooked ham cubes in about 1 in sizes. Next time I would try 1 1/2 cups of water. It was very yummy, though! I used all but 5 potatoes from a 5 lb bag of potatoes. Definitely a keeper. Everyone loved it.
