Crockpot Chicken Soup

With all the flu bugs and stuff, I thought a quick and easy chicken soup recipe would be good. I have been using it because I have a new baby and getting supper on the table quickly sometimes can be hard. I love the crockpot because you can put things in when you first get up in the morning and they cook all day. The house smells just YUMMY! I also use turkey in this recipe too.

Ingredients

  • 2 1/2 pounds bony chicken pieces (I also use chicken thighs because they aren't too expensive)
  • 3 stalks celery with leaves, cut up
  • 2 carrots, cut up
  • 1 large onion, cut up
  • 2 sprigs parsley
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme, sage, or basil, crushed
  • 1/4 teaspoon pepper
  • 2 bay leaves
  • 4 cups cold water
  • 1 chicken bouillon

Directions

In a 3 1/2 or 4 quart electric crockpot combine chicken pieces; celery; carrots; onion;parsley; salt;thyme,sage, or basil; pepper; bay leaves; bouillon cube and 4 cups of water. Cover and cook on low-heat setting for 8 to 10 hours. Remove chicken, debone, cut up into pieces and return to crockpot.

    This sounds delish!!! But....can you use chicken breast instead? My children would rather white meat.
