Crockpot Chicken Tortilla Soup

Crockpot Chicken Tortilla Soup

By SarahNB

This is a recipe that has very little prep and so easy to make. We especially like the Hint of Lime Tortilla Chips!

Ingredients

1 lb. boneless chicken breasts , cut up
1 large carton of chicken broth
1/2 cup uncooked regular long-grain white rice
1 tsp. ground cumin
1 cup frozen corn
1 cup Chunky Salsa
1 tbsp. chopped fresh cilantro
2 tbsp. lime juice

Directions

Place chicken, broth, salsa, cilantro and lime juice in a crockpot and cook on low for several hours or all day. Add the rice and corn for the last hour. Serve with Tortilla chips for dipping.
