Crockpot Curried Chicken |
One of my husbands favourites!
Ingredients
- 1 ½ lb boneless skinless chicken, quartered
- 1 C chopped onion
- 3 C cubed peeled potatoes
- 1 chopped apple
- 2 T curry powder (atleast)
- 1 14-oz can chicken broth
- 2 C uncooked Minute Rice
- 2 C frozen peas, thawed
Directions
- Place meat, onion, potatoes, apple, curry powder and broth in crockpot.
- Cover with lid and cook on low for 8-10 hours or on high for 5 hours.
- Stir in rice and peas. Cover and cook an additional 20 minutes.
Makes 6 servings.

I have been making a dish like this for years on the stove top so when I saw this I knew I had to try it! The key to this dish is a good curry, I'm not fond of the powders that you buy in the grocery store. Good curries can be found in ethnic food markets. I used a curry paste and added a can of coconut milk. I did saute my chicken slightly in my 6qt Versaware Pro Crock Pot then added the rest of the ingredients. Instead of using minute rice I used jasmine scented rice and served it on the side. My rice steamer, gets used just as often as my slow cooker!

can't wait to try this one out! Sounds like my kind of crockpot recipe....set it and go about your day....and EVERYTHING cooked in ONE pot....plus my husband loves curried anything. yay!
