Curry Chicken |
This is my husband's favourite dish and he never even liked curry!
Ingredients
- 1 medium or large onion (cut up in rings)
- cooking spray
- Chicken breasts (4-6) (I like to use boneless, skinless but bone-in is good too)
- salt
- pepper
- 1/3 cup dijon mustard
- 1/4 cup honey
- 2 tbsps lemon juice
- 1/2 or 1 tsp curry powder (if you are a beginner curry user, try 1/2 tsp at first)
- 1 tbsp oil
Directions
Heat oven to 350 degrees. Mix mustard, honey, lemon juice, curry powder and pepper in a bowl. Mix well. Spray baking dish with non-stick cooking spray. Arrange onions on baking dish and sprinkle pepper on onions (totaste). Arrange chicken on top of the onions, sprinkle with salt and pepper. Pour mustard/honey/curry mixture over chicken. Bake in oven 45 minutes, basting occassionally. 15 minutes before the chicken is done, turn chicken over and baste. Serve over rice.

This reciepe was just okay. You can hardly taste the curry. I give it a 4 out of 10.

Thanks for the recipe Karen - wanted some sort of easy Curry Chicken recipe..googled it ..and found your recipe. Worked out very nicely and very delicious! 9/10 for me. I'm making this dish right now and I can't figure out where the 1 tbsp of oil comes in?

I wasn't sure about the tbsp of oil either. I didn't add it to the mustart/honey mixture. Hope I wasn't supposed too. I have it all prepped in the fridgr waiting for tonight
