Dad's Pumpkin Chip Cookies |

Growing up these cookies were my Dad's specialty. He'd make batches and batches of them to freeze. If you're in a hurry you can also use canned pumpkin and they're just as tasty!
Ingredients
- 1 1/2 cups Sugar
- 1 1/2 cups of Pumpkin (canned or fresh)
- 2 Eggs
- 3/4 cup Vegetable Oil
- 1 1/2 teaspoons Milk
- 3 cups Flour
- 1/2 teaspoon Salt
- 3 teaspoons Baking Powder
- 1 1/2 teaspoons cinnamon
- 1 1/2 teaspoons Baking Soda
- 1 1/2 cups Chocolate Chips
Directions
- If using fresh pumpkin, prepare and puree pumpkin until smooth.
- Combine all wet ingredients together and mix well with hand or bowl mixer.
- In a separate bowl combine all dry ingredients except chocolate chips.
- Once wet ingredients are blended together gradually add dry ingredients.
- Fold in Chocolate Chips.
- Drop 1 1/2 balls of dough onto non-stick cookie sheet
- Bake at 325 degree for approximately 10 mins. (time will vary in different ovens)
