Dad's Pumpkin Chip Cookies

Growing up these cookies were my Dad's specialty.  He'd make batches and batches of them to freeze.  If you're in a hurry you can also use canned pumpkin and they're just as tasty!

Ingredients

  • 1 1/2 cups Sugar
  • 1 1/2 cups of Pumpkin (canned or fresh)
  • 2 Eggs
  • 3/4 cup Vegetable Oil
  • 1 1/2 teaspoons Milk
  • 3 cups Flour
  • 1/2 teaspoon Salt
  • 3 teaspoons Baking Powder
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 teaspoons Baking Soda
  • 1 1/2 cups Chocolate Chips

 

 

Directions

  1. If using fresh pumpkin, prepare and puree pumpkin until smooth.
  2. Combine all wet ingredients together and mix well with hand or bowl mixer.
  3. In a separate bowl combine all dry ingredients except chocolate chips.
  4. Once wet ingredients are blended together gradually add dry ingredients.
  5. Fold in Chocolate Chips.
  6. Drop 1 1/2 balls of dough onto non-stick cookie sheet
  7.  Bake at 325 degree for approximately 10 mins.  (time will vary in different ovens)
