Easy berry ice cream |
This fresh, fruity ice cream is packed with berries. And you don’t need an ice cream machine to make it! Makes 8 servings.
Prep time: 25 minutes, plus freezing
Cooking time: 15 minutes
Ingredients
- 1 lb (450 g) strawberries
- 8 oz (225 g) raspberries
- 8 oz (225 g) blackberries
- 3/4 cup superfine sugar
- 2⁄3 cup heavy cream
- 1–3 tbsp confectioners’ sugar
Directions
1. How to make easy berry ice cream
2. Wash all the berries—pick out any bits of stalk—and hull the strawberries.
3. Put the berries and the superfine sugar in a pan, cover, and cook slowly for 5 to 10 minutes.
4. When the berries let out their juices, turn up the heat and simmer for 5 minutes.
5. Let the fruits cool, then blend them until smooth.
6. Now strain the blended fruits to remove the seeds.
7. Pour the strained fruit into ice cube trays and freeze until solid.
8. Put the cream in a bowl and whip it until it forms soft peaks.
9. Take the berries out of the freezer and thaw for 5 minutes, then roughly chop in a blender. Add the cream.
10. Blend to combine, then add confectioners’ sugar to taste.
11. Serve immediately, or freeze for an hour before serving.
