Easy Frittata

We love this and it's a great light meal at any time of day (especially when made with our own free range eggs!).

Ingredients

  • 4 eggs
  • 1/3 cup milk
  • 1 can of Cream of Mushroom soup or Cream of Celery
  • 1/2 cup diced sweet pepper (red or green)
  • 1 small onion choped
  • 1 cup chopped fresh tomato
  • 1/2 cup crumbled or chopped cooked bacon
  • 1 tsp rosemary or Italian herbs
  • Parmesan cheese

Directions

Beat eggs; add soup and milk and mix thoroughly. Stir in veggies, bacon, and herbs. Pour into a prepared pie pan (greased or vegetable oil sprayed) and sprinkle with parmesan to your liking. Bake at 350F until well set. Serve with salad and/or toast and/or hash browns. Hope you enjoy it as much as we do!
