This is a great recipe to make all year long and is a perfect recipe to get the kids interested in cooking. During tomato season we get the kids to pick the ingredients from the garden, combine with store bought items and they create their own masterpiece!
Ingredients
- 2 small ripe avocados
- 1 small tomato, diced

1/4 cup green onion, sliced thinly

1 Tbsp chopped fresh cilantro

2 Tbsp fresh lime juice

Salt and pepper to taste
Directions
- Remove pit from avocado, peel and chop into small chunk size pieces.
- Combine avocado, lime juice and cilantro in a mortar and pestle or food processor and process until not quite smooth.
- Remove to a bowl, add diced tomatoes, sliced green onions, and salt and pepper. Mix well. Refrigerate until chilled.
- Serve with baked tortilla chips or use in a layered Mexican dip.
