Easy Tzatziki |
Get your kids involved when creating this easy to make, but sophisticated to serve Greek favourite. One dunk in this classic dip can take any meal, snack or side from dull to delectable. Makes about 1 ½ cup (325 mL).

Ingredients
- 1 cup (250 mL) plain yogurt
- 1 cup (250 mL) shredded seedless cucumber, squeezed dry
- 1 garlic clove, minced
- 1/4 tsp (1 mL) sugar
- Salt and pepper
Directions
1. In small bowl, combine yogurt, cucumber, garlic and sugar. Add salt and pepper to taste.
2. Chill for 1 hour to blend flavours. Serve with souvlaki or grilled chicken sandwiches.
Variation: For a thicker sauce, start with yogurt cheese: line a 6 inch (15 cm) strainer with a double layer of cheesecloth; place over bowl. Add 2 cups (500 mL) plain yogurt (with no gelatin or starch added) to strainer.
Cover and refrigerate 24 hours to drain. Discard whey liquid.
