Enchiladas

This is a creative way to spice up plain ground beef.

Ingredients

  • 2 lbs ground beef
  • 1 lg. onion, chopped
  • 1 can chopped olives
  • 1 can chopped green chilies
  • 2 cans hot or mild enchilada sauce
  • 2 doz. corn tortillas
  • 16 oz.cheddar cheese,shredded

Directions

Fry ground beef with onion and drain. Mix in olives and chilies. Heat oil in large skillet and fry corn shells just until soft, you don't want them to hard or they won't roll up. Take your tortilla and lay it flat on a cookie sheet, put a large spoonfull of meat mixture in the middle and roll up. Continue this process until all tortillas are used. Top with sauce and cheese and bake in preheated 350 degree oven until cheese has melted. You can garnish these with green onion and sour cream.
