English Muffin Tacos |
A new twist on an old favourite. Makes 4 English muffins
Prep Time : 15 minutes
Cooking Time: 15 - 25 minutes
Ingredients
- 1 lb (500 g) lean ground beef
- 1 onion, finely chopped
- 1 tbsp (15 mL) olive oil
- 2 tbsp (30 mL) tomato paste
- 1/3 cup (75 mL) water
- 1 tsp (5 mL) instant vegetable broth mix
- 1/2 cup (125 mL) pizza or tomato sauce
- 1 tbsp (15 mL) chili powder
- 4 English muffins, split in half
- 1/2 cup (125 mL) chopped green bell pepper
- 1/2 cup (125 mL) chopped tomatoes
- 2 cups (500 mL) grated Canadian Mozzarella cheese
Directions
1. In skillet, sauté ground beef and onion in oil until meat is browned. Drain off fat. Add tomato paste, water, broth, pizza sauce and chili powder. Mix well and simmer for about 5 to 10 minutes, stirring regularly, or until mixture thickens. Remove from heat and set aside.
2. Top each muffin halve with seasoned beef mixture, green pepper and tomatoes. Sprinkle with Canadian Mozzarella cheese. Bake in oven for 5 to 10 minutes or until cheese has melted. Can be eaten hot or cold. Wait until completely cool to wrap.
