English Pancakes

My husband's family is English and while watching teletubbies of all shows we discovered a variation of this recipe. I did a little experimenting and came up with a really tasty treat. This recipe requires a little more time than traditional pancakes but they are worth it!

They are a little like crepes but we serve them with whatever anyone wants, traditionally it would be a sqeeze of fresh lemon and sugar, then rolled and eaten. Yum!

Ingredients

  • 5 heaping tbsp. flour
  • 2 eggs
  • 1/4 tsp. salt
  • 1/2 to 1 tsp. sugar
  • milk

Directions

Beat eggs in a bowl. In a separate bowl, combine flour, salt and sugar. Combine the egg and flour mixtures by pouring the eggs slowly into the flour mixture while stirring. Now add milk, pouring with one hand and stirring with the other. The batter should be thin.

Spray a frying pan with nonstick vegetable coating or melt a little butter in the bottom of the pan. Pour batter in centre. Tip the pan so the batter spreads to the outer edges. Once the pancake has cooked on the first side, work around the edges of the pancake with a spatula to loosen it and flip it over. Allow second side to cook.

Serve with maple syrup or a mixture of lemon juice and sugar.
