French Toast Berry Bake

This is one of our favourite breakfast recipes because we can use frozen berries and make it at anytime of the year.  We serve it with bacon and warm syrup and a little sprinkling of powdered sugar to make it look like extra yummy!

Ingredients

  • 1 loaf Ciabatta bread (or any firm fresh bread)
  • 6 eggs
  • 1 cup milk
  • 1/4 cup evaporated milk
  • 1 tsp vanilla extract
  • 1 cup blueberries (frozen)
  • 1 cup raspberries (frozen)
  • 1 cup strawberries (frozen)
  • 1 cup blackberries (frozen)
  • 1/8 cup white sugar
  • 1/8 cup brown sugar
  • 1/4 cup maple syrup
  • cinnamon, to taste
  • nutmeg, to taste
  • 1/2 stick butter, cut into small chunks

Directions

The Night Before

  • Coat a 9 by 13 inch pan with oil or cooking spray.
  • Pour frozen berries into a large bowl and toss with 1/8 cup sugar (to coat).
  • Cut Ciabatta bread into 1 inch chunks and place in bowl with berries.  Gently toss with frozen berries and pour into prepared pan.
  • In a medium bowl combine eggs, milk, evaporated milk, vanilla, cinnamon and nutmeg.  Whisk until combined and pour over bread and berry mixture.  Toss gently to coat mixture.
  • Top with brown sugar and maple syrup.
  • Cover with foil and refrigerate overnight.

In the Morning

  • Top with maple syrup and chunks of butter.  Bake at 350 degrees uncovered for approx. 40 minutes.  The bread will be golden brown and the mixture custard like.
  • Serve with warm maple syrup.
