Gingerbread Elf House

This recipe is perfect for a small sized gingerbread house. In addition to the cookie dough you'll also need some Royal Icing (you can buy the powdered at your local grocery store), some candies to decorate and a template for cutting out the house pieces . Ingredients

  • 3 1/4 cups sifted all-purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 cup (1 1/2 sticks) unsalted butter (room temperature, softened)
  • 1/2 cup light-brown sugar, packed
  • 1 Tbsp ground ginger
  • 1 Tbsp ground cinnamon
  • 1/2 teaspoons ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup unsulfured molasses
  • Royal Icing (if making a house)
  • Candies to decorate (if making a house) 

Directions

In a large bowl, sift together flour, baking soda, and spices. Set aside.

Cream the butter. Add sugar and beat until fluffy. Mix in eggs and molasses. Gradually add the flour mixture. (You may need to work it with your hands to incorporate the last bit of flour.)

Heat oven to 350°. Place dough on a large piece of lightly floured surface. Using a rolling pin, roll dough 1/8 inch thick. At this point you can make a batch of gingerbread cookies or you can use the template to make house pieces that can be used for a small elf house.

Transfer to parchment paper lined cookie sheets. Bake until crisp but not darkened, 8 to 10 minutes. Remove from oven. Let sit a few minutes and then use a spatula to transfer cookies to a wire rack to cool completely. Decorate as desired.

Let the kids decorate! Remember, it is about having fun so let the kids be creative!
